WHAT WILL YOU BE DOING
As a Sous Chef, you will be responsible for the preparation of all foods within the kitchen, ensuring it is to the highest of standards. You will be quick, efficient, and accurate, providing prompt service delivery. You will understand the importance of consistency and cost control. You will lead and support junior members of the team and produce your own work in accordance with deadlines and quality guidelines. Your tasks as a Sous Chef will include but will not be limited to:
THE DUTIES
- Being part of the kitchen brigade, assisting the Head Chef with communication and supervision where needed.
- Ensuring food quality, food preparation, and high levels of standards are maintained for all dishes created to ensure an excellent Guest experience.
- Keeps cooking stations stocked, especially before and during prime operation hours.
- To be in charge of all kitchens in the absence of the Head Chef to ensure the smooth running of the department.
- Supervising all kitchen stations.
- Providing training to new starters.
- Provide support training to the team covering cooking, food preparation, food handling, and dish plating.
- Supervising, motivating, and working closely with other Chefs of all levels.
- Ensuring food quality and excellent standards are maintained for all dishes created.
- Assisting the Kitchen Coordinator the Head Chef with determining food inventory needs, stocking, and ordering.
- Supporting the Head Chef to ensure the kitchens meets all regulations including sanitary and food safety guidelines.
- Meeting objectives set by the Head Chef.
- Supervises and maintains standards of cleanliness in the kitchen.
- Conduct daily shift briefings with the kitchen in the absence of the Head Chef.
- Maintains knowledge of local competition and general industry trends
- Ability to control food waste and identify opportunities for improvement of food/labour costs.
- Creates a highly functional, teamwork-orientated back-of-house team.
- Take responsibility for rectifying hazardous situations, and reporting major areas of concern to the Head Chef.
WHAT ARE WE LOOKING FOR IN YOU
- Experience as a Sous Chef in a Four or Five-Star or high-end restaurant.
- Strong knowledge of cooking methods, kitchen equipment, and best practices.
- Teamwork-oriented with the ability to lead and train a team.
- Competent level of English spoken and written.
- Must be available to work a varied schedule including early late shifts, weekends, and bank holidays.
- Thorough knowledge of food products, recipes, and specific food preparation.
- Approachable person, with a hands-on and can-do attitude.
- Can produce consistent service in line with company recipes and standards.
