Job Summary:

As a Dosa Chef at EnglishPoint Marina, you will be responsible for preparing and cooking dosas, a popular South Indian delicacy, to the highest standards of quality and taste. You will ensure the smooth operation of the dosa section in our kitchen, maintain high levels of cleanliness and food safety, and work collaboratively with the entire culinary team to deliver an exceptional dining experience for our guests.

Responsibilities:

– Prepare and cook dosas and related South Indian dishes according to traditional recipes and standards.

– Monitor and maintain the quality and consistency of dosa preparation, ensuring adherence to established recipes and presentation guidelines.

– Manage dosa section efficiently, organizing and prioritizing tasks to ensure timely service during busy periods.

– Coordinate with the Head Chef and Sous Chefs to plan and develop new dosa recipes, incorporating local flavors and seasonal ingredients.

– Maintain high standards of food hygiene, safety, and cleanliness in the dosa section, following proper sanitation and kitchen procedures.

– Collaborate with the culinary team in food preparation, plating, and overall kitchen operations to ensure smooth workflow and timely service.

– Train and supervise junior kitchen staff, providing guidance and support in dosa preparation techniques and best practices.

– Monitor ingredient inventory, placing orders as needed and ensuring proper storage and utilization to minimize wastage.

– Adhere to cost-control measures and portion control to maximize profitability while maintaining quality.

– Stay updated on industry trends and innovations in dosa cuisine, incorporating new techniques and flavors into the menu offerings.

Requirements:

– Proven experience as a Dosa Chef or in a similar role, preferably in a high-end restaurant or hotel.

– In-depth knowledge of dosa preparation techniques, batter fermentation, and cooking equipment.

– Familiarity with South Indian cuisine and a passion for creating authentic, flavorful dosas.

– Strong understanding of food safety and sanitation practices.

– Ability to work efficiently in a high-pressure, fast-paced environment.

– Excellent organizational and time management skills.

– Strong attention to detail and a commitment to delivering top-quality food.
